Bursting with aromas of ripe apples, clay and limestone minerality, finishes dry and grippy with subtle lemon notes. Made from 30 varieties of heirloom apples from Alspaugh orchard, fermented in stainless steel for one year then bottle-conditioned for 10 months. Less than 400 bottles.
