The Fermentation Science Institute (FSI) at Southern Illinois University Carbondale supports fermentation-related academic programs, research, and outreach, including the production and analysis of alcoholic beverages, fermented foods, cheese, and industrial fermentation. They administer a B.S. in Fermentation Science, one of only seven bachelor's degrees recognized by the Master Brewers Association of the Americas. FSI operates a service laboratory and supports the iFERM Hub.
