Fish Hawk Spirits is Florida’s only medal-winning farm-to-bottle ultra-premium spirits distillery, established in 2012 as the fifth licensed distillery in the state, located in Ocala. They produce a portfolio of 27 spirits including the Sui Generis family of whiskeys, Resurgence rums, Island Grove vodkas, Absinthia absinthes, and Colonial brandies, using locally grown corn, fresh fruits, herbs, and spring water from their land. They emphasize hand-built stills on a farm, offer distillery tours, and have won awards in competitions like SIP Awards, Fifty Best, and others.
