Dao Distillery produces rưộu đằ, a traditional Vietnamese rice liquor akin to shochu or soju, using premium Calrose and jasmine rice from the Sacramento River Delta. Founded by Dr. Binh Đào, a chemistry professor, it blends scientific distillation with family traditions from his uncle Tuong Đào. In its first year since opening in September 2024, it has won multiple gold medals and the Sustainability Leader Award from the City of Rancho Cordova for zero-waste practices.
