Nova Brewing Co. is a family-owned hybrid craft saké and beer brewery in Covina, California, founded by James Jin and Emiko Tanabe who took over an old beer brewery in 2019. They hand-craft sake using 100% California Calrose rice polished to 50%, in-house koji from imported Japanese spores, and sake yeast strains #7 and #9 from Japan, resulting in bold, acidic sake suited to LA's food scene. Their beers feature sake yeast and Asian fruits, teas, and spices for unique flavors.
