Blade & Talon Wine produces small-batch wines from esoteric grape varieties farmed in San Benito County, California's oldest commercial winegrowing region since 1851. Embracing integrity, sustainability, and history, they use cosmopolitan techniques, minimal intervention, native yeast fermentation, and no additions beyond minimal SO2, resulting in unfiltered, playful, and distinctive wines that share forgotten narratives of the California Central Coast. Wines are best served with a slight chill and paired with modern palates.
