Carillon Brewing Co. gives visitors a taste of 1850s-era Dayton through authentically prepared beers using the historic brewing process. It is the nation’s only production brewery located in a museum and the only U.S. brewery that fully replicates 19th-century methods. Featuring costumed interpreters, wood smoke, oak barrels with educational panels, and barbecue from Dayton Barbeque Company.
