Carillon Brewing Co. is the nation’s only production brewery located in a museum, fully replicating the historic 1850s brewing process to give visitors a taste of Dayton's past. Situated in Carillon Historical Park, it features costumed interpreters, wood-fired brewing, American oak barrels with educational panels, and food from Dayton Barbeque Company. The experience immerses guests in Midwestern history through beer, barbecue, and spent grain bread.
